All the honey that we have, has been collected in the summer which is the honey season. Since these are all seasonal products, we have to hold and stock them through till the next season. The honey will stay for long – though we say, for a year, it can stay for longer. In the cold, it is not a problem at all, though the honey may crystallize – either you can put the bottle out in the sun or put it in a bowl of warm water. Dont heat the honey – that is the main thing as we believe it loses all its natural properties when that happens – it is more like a sweet sugar solution. During the summer, you have to store the honey in a cool, dry place – honey is hygroscopic, so it should not be left open in wet conditions.
Commercially available honey is thicker because they have heated it to reduce moisture content. Since they deal in hundreds of tons, and are never sure about their sources and quality, they flash heat it to above 60 deg C and then cool it. It basically kills all the bacteria and improves shelf life – since we dont heat it, our honey might be a little thin but dont worry about that. It also differs from batch to batch, as we hold all incoming honey, separately. From dryer areas, there is less moisture content while from wet areas, the moisture content can be more.
Rest, be assured about the honey – you will not have problems with the honey and if something like that ever happens, we will replace. Our effort with the community is to process the honey as hygienically as possible, without min use of hands. It reduces the chance of spoilage.
