Read the colour
The shade in the jar tells you what was blooming when the bees flew. Pale gold means delicate pollen honey; deep mahogany means bold Jamun. Nothing added, just a different flower.

The harvest
Kurumba and Irula honey gatherers climb sheer rock faces on rope ladders to reach the wild combs of Apis dorsata, the Giant Rock Bee. They take only what the forest can spare, so the colony thrives. What comes down is strained cold and bottled as-is.
It is an old arrangement. Rock paintings of this same harvest go back 2,400 years - and this one bee still produces two-thirds of all the honey made in India.
